Breakfast Bake

Every week I make the same breakfast dish for my husband that he loves! He’s one of those people who can eat the same thing every day, week after week and not get tired of it (thank goodness). The best part about this dish is that you can change it up by changing up the type of protein you use (sausage, bacon, chorizo, etc.), add vegetables or potatoes, use cheese or don’t. The options are endless and you can tailor it to whatever you like!

First things first, I preheat the oven to 350 degrees Fahrenheit. I add 12 eggs to a bowl and whisk them up. I add milk, salt, pepper, and garlic to the eggs. I usually use 12 cooked sausage links (I get either the frozen pork or chicken links from Costco) that I chop up into bite size pieces. Then I add in chopped up vegetables. I’ve used peppers, onion, zucchini, or spinach in the past, but Alex’s favorite is chopped up bell peppers. Lastly, I add in cheddar cheese. Like I said, you can really add in whatever you like. I mix that all up.

To the bottom of a greased glass pan, sometimes I add frozen hash browns, and then add the egg/sausage/veggie mixture on top. Other times, I skip the hash browns and just add the egg mixture. From there you can top with more cheese or spices, or just leave it as is. I put the pan in the oven and bake it for about 40 minutes, or until the edges turn golden brown. This amount makes about 6-7 large servings, which lasts Alex the whole week. I just cut it into pie pieces, and Alex takes out one serving in the morning, microwaves it, and adds salsa or guacamole. Ta-da! It takes me maybe ten minutes to prepare, and you have breakfast ready for the entire week.

I happened to make this most recently during the quarantine, so I didn’t have peppers/onions or many fresh veggies on hand. So, I did without. And Alex still ate it and enjoyed it. This is super versatile, so you can make it work with whatever you have access to.
